Pat Drummond is an iconic, eccentric and much loved singer/songwriter who has made a huge impact on fans of country and folk music, all over Australia.
His loyal band of supporters have followed him from his hugely successful shows at the Rest Hotel in Milson’s Point in the seventies on a journey that has taken him to large and small towns all over the country.
His highly original music crosses the genres of country, folk and rock ‘n’ roll and his musical career spans over three decades. His long career has seen him pass through a half dozen ‘reincarnations’ that have produced an incredible body of original work in as many different musical genres.
Drummond’s songs… witty, ironic, hilarious, thought provoking, angry and passionate are always beautifully crafted and are the fuel that drives his main career as a great entertainer.
Pat is presenting his unique “Rebel Without A Clue” – 1950’s themed Christmas show that will involve trivia, short films, story telling and sing-a-long songs.

Chef David Povelsen is currently incapacitated with a broken leg. We wish David a speedy recovery and in the meantime we are delighted that chef Barry O’Sullivan will be stepping in to create the 3 course gourmet meals for our upcoming special event shows at the Paragon.
Barry and his partner David Waters (also previous co-owner of Escarpment Modern Eatery with Barry) will be preparing the new Yulefest gourmet meals for all the upcoming Christmas in July dates.
Chef Barry O’Sullivan graduated from the internationally famous cookery school The Tante Marie Culinary Academy with a Professional Cordon Bleu Diploma and has worked in numerous UK eateries including La Tante Claire, Kensington and Simply Nico, Battersea and in Paris at the Ritz Escoffier. Throughout his career he has cooked for the regal and famous including a stint with the Royals and has appeared with Keith Floyd in his French Master Class cooking series on English television. He has travelled extensively throughout regional France where he has nurtured his passion for flavoursome country food.
Barry has operated his own restaurants in Sydney-Frying Times Fish Café in Glebe, Simply French Restaurant in Ultimo, as well as The Divino Deli Café in Katoomba, The Gallery Restaurant at Katoomba Fine Art, and Escarpment Modern Eatery in Blackheath.
He is the recipient of two Chef’s Hats Awards and a People’s Choice Award from Australian Good Food Guide.
He has appeared on the ABC’s Saturday Mornings with Simon Marnie’s “Chef’s Challenge” and has had several food articles and recipes published in “Blue Mountains Lifestyle” and “Australian Gourmet Traveller” and “Delicious” magazines.
The New Yulefest Special Event 3 Course Gourmet MENU is as below:
Shortcrust pastry tartlet with marinated artichokes, gruyere cheese, caramelised eshcallots and fresh thyme
Salad of Tasmanian smoked salmon, figs and grana parmesan, quail eggs, snipped chives and vinaigrette
Roasted turkey breast with cranberry, pear and chestnut stuffing and a white wine sauce
With Maple syrup, honey and Dijon mustard oven baked glazed ham served with a Cumberland sauce of red currants and port
Plus Roasted potatoes and pumpkin – green beans with crushed hazelnuts
Traditional plum pudding with a brandy crème anglaise and berries
